WHere is a home-style interpretation of a beverage from a new drinks list. This is a batch premix that is loaded full of flavours of a festive period, rendering it ideal for hosting a holiday party. Reserve the remaining syrup to use in brunch beverages, sweets, or for more rounds of the drink.
Bikini Recipe
Yields 10 servings
For the Clementine Cordial (produces 750ml)
300ml recently pressed clementine juice
200ml fresh lemon juice
500g granulated sugar
To make the Drink (makes 850ml, to serve 10)
400ml decent vodka
100ml London dry gin
150ml peach-flavored liqueur
200ml clementine syrup (as made above)
Whole cranberries, as a garnish
Mandarin essential oil, for finishing
Instructions
For the Syrup: Combine all the components inside a saucepan, bring to a gentle boil, stirring until the sugar dissolves. Then, remove from the burner and let it to cool entirely. Pour into an sealable bottle, cap it keeping it chilled, where it will keep for about a month.
For the Batch Mix: Mix the specified liquids into a sizeable container, allow it to infuse for 60 minutes, then strain best through muslin, to ensure it's perfectly clear.
When ready to serve: Add 85ml from the premix to a mixing glass packed with ice, and stir carefully for one minute until cold. Strain to a cold coupe glass or equivalent, top with some cranberries and complete it by giving it a quick spritz of the essential oil over the drink.
